5 Minutes with R&D Dietitian Jade Gibbons

Did you know our team includes two Accredited Practising Dietitians? Meet Jade our R&D dietitian and the incredible brains and creativity behind our delicious frozen dessert and yoghurt flavours. We sat down with Jade to see what her role involves, how she comes up with flavours and what her favourite creation is!

  1. You are a qualified dietitian – is this the type of role you always imagined yourself in? If not, what had you initially planned to do with your degree?
     My aim was to be a dietitian however I never really saw myself in the traditional role of dietitian that is in the public or private health service sector. I wanted to be able to be creative but overall, I wanted my love of food to be contagious; to help others find a love of food!
  1. Why did you become a dietitian in the first place?
    I wanted to be involved with food and to go to university, so I researched what university degrees were available that involved the study of food. Voila, I enrolled in a Nutrition and Dietetics degree at the University of Sydney. At the time, they offered a double degree of the above combined with Exercise and Sports Science. I enrolled in both as I loved being active and previously had completed a Certificate III in Fitness. I was a bit nervous though as although I loved being active, I’m not really a ‘sporty’ person and thought I would be having to play sports during study breaks, with all these sporty people! Yes, most of fellow students were sporty but I couldn’t have spent 5 years with a better bunch. By the way, I’m still not sporty.
  1. What does your role at Luz Almond Involve?
    Every day, week and month is different. When I first started with Luz Almond in February 2014 it was in the start-up stage of a business; I literally was making almond milk! I could go for quite a while about what my role at Luz Almond has involved but primarily I look after product development, understanding and applying food regulation and coordinating the development of labels.
  1. How did you come up with all those delicious flavours for the Frozen Dessert and Yoghurt?
    Awww, thank you. Prior to recipe development, I always start with market research into consumer preferences and trends, as ultimately it is customers whom I want to love the product. Once I have a shortlist of potential flavours, that’s when the R&D really begins and there are many trial recipes before the final recipe for each flavour is decided. My goal for the end product is for it to be loved by customers and have that something extra special that surpasses customers’ expectations; enabling their love of food to reach new heights.
  1. If you had to pick one product from the Luz Almond range, which would be your favourite?
    Easy. Cacao Fudge Frozen Dessert. It still surprises me however rich and creamy it is! Mmmm…chocolate.

Cacao Almond Milk Frozen Dessert

Carrot Cake Muffins

Carrot Cake Muffins

Ingredients

1 cup rice flour

½ cup almond meal

1 tsp xanthan gum

2 tsp baking powder

½ tsp baking soda

½ tsp cinnamon

sea salt

1 cup grated carrots

½ cup pitted medjool dates

½ cup chopped walnuts

½ cup honey / rice malt syrup

½ cup Luz Date Almond Milk

2 eggs

¼ cup light extra virgin olive oil or macadamia nut oil

Method

  1. Preheat oven to 180 degrees celsius.
  2. Sift rice flour, almond meal, baking powder/soda and salt and mix evenly.
  3. Melt the honey in a small saucepan on low heat.
  4. Use a hand blender to combine the eggs, Luz Date Almond milk and oil. Then add the melted honey.
  5. Keep the mixer running gradually add the flour/almond meal mix until well combined.
  6. Fold in the carrots, dates and walnuts.
  7. Pour mixture into well-greased muffin tins, and bake for about 25 minutes or until cooked through when tested with a skewer.

You might remember a little while back we introduced one of our favourite instagram sensations and food blogger, Ksenia of @breakfastcriminals. Since meeting her in Central Park NYC for a delicious Breakfast back in September we have watched her go from strength to strength, with her delicious recipes having being featured on such blogs as LuluLemon, The Body Book (yes that is Cameron Diaz’s site), MindBodyGreen, Well+Good and Le Pain Quotidien, among others.

Most of you are probably familiar with some of her delightful breakfast smoothie bowls, if you aren’t I suggest you get over to her instagram or blog immediately.  Quick Q&A with

Q: How do you maintain a healthy weight?
A: “Exercise is non-negotiable – I’m a sucker for a sweaty vinyasa and a good cardio. Not only it gets my heart rate up and is plain fun, but also it helps me connect with my body on a different level, which ultimately helps control appetite and emotional eating. A few more rules I follow is not shopping when hungry, and only buying groceries that I won’t regret eating 🙂 And rule number one of course, never skipping breakfast! It’s often my biggest meal of the day.”

 Q: Why is a healthy weight important?
A: “Let’s get real, nothing feels more amazing than having a strong sexy bod! It gives you the confidence to go for your dreams and accomplish all your goals.”

Ingredients to mention:
  • Anchovies – love the salty, meaty flavour they add to dishes. I add these to just about everything!  A little powerhouse of healthy fats (omega 3’s) and contains selenium.
  • Tahini – my love, and a great source of calcium and essential fats and protein.
  • Papaya – I love this sliced up on sourdough spread with peanut butter and a squeeze of lime..utterly delish!
  • Cinnamon & Coconut Granola – my latest stash of homemade muesli/granola. I love making my own so I can use great ingredients and know that its super fresh!
  • Eggs – so versatile and something that I crave these days! I love them fried in olive oil as the Italians do, or added to pancakes for bumping up the protein content.

“eat regular meals and snacks throughout the day with a balance of macronutrients. This will ensure cravings are kept and bay and reduce the desire to overeat in the evenings.”

In September we met up with one of our favourite food bloggers and the clever, creative soul behind the awesome instagram account BreakfastCriminals… Ksenia! In true New York style, we met up in iconic Central Park and shared one of Ksenia’s delicious creations…a Dragon Fruit Berry Bliss Chia Pudding (for the recipe click here). In case the picture doesn’t say it all…it was BEYOND delicious and packed with superfood goodness!

Ksenia founded Breakfast criminals after a visit to Hawaii where she was exposed to the exotic tropical goodness of colourful, superfood packed acai bowls. After a quest to find something similar back home in NYC, Ksenia was disappointed to find the limited options available lacked the love and soul which enriched those with which she had fallen in love with in the Aloha culture. So with some experimentation, inspiration and tonnes of enthusiasm from her friends and the instagram community, breakfast criminals was born!!

From her passion and love for food, health and wellbeing, Ksenia’s Breakfast Criminals has turned into a movement inspiring people all over the world to start their day with a healthy and nourishing breakfast, most importantly made with love! Cacao Mint Smoothie

Cacao Mint Smoothie

Start your day with this nutrient packed smoothie!
Ingredients

1 cup Luz Almond Cold Pressed Almond milk with Medjool Date

½ bunch mint, roughly chopped

1 tbsp chia seeds

1 tbsp cacao powder

Maple syrup to taste

1 frozen banana

 

Method
1. Blend all ingredients until smoothie consistency, adding maple syrup last to taste.
2. Top with a mint leaf and there you have a delicious and nutritious breakfast which will keep you full for hours!

During our recent trip to New York, I was lucky enough to meet the very lovely Heather Cox who through her passion for fresh, organic and most importantly REAL food, founded her company Eat Real Food NYC. Originally born in Sydney, and having lived all over the world, Heather currently spends her time between the Hamptons and NYC. Consequently you will find upon exploring her website Eat Real Food NYC that Heather not only highlights the best New York has to offer in terms of great wholefood stores, markets and restaurants but she also includes her best picks from both the Hamptons and Sydney as well. In addition she also shares her own clean, fresh, healthy food recipes … check out the chocolate hazelnut banana tart which looks to die for!!!

Heather’s philosophy which is defined by her company name and supported by all that she does is that everyone deserves access to fresh, organic and most importantly REAL food. Thus she is a firm believer in using education, awareness and inspiration as a means of creating this. In line with this some of Heather’s most important work includes working with Stone Barns Centre for Food and Agriculture, where she teaches kids about the importance of knowing where their food comes from, sustainable farming and healthy eating. She also teach kids yoga and work at Balsam Farm Stand over the summer. While extremely dedicated to eating a clean, pescatarian diet, Heather openly admits to enjoying such indulgences such as cheese, wine and chocolate because as she puts it ‘’Quite simply life would be boring without it”!
