Spiced Chia Pudding

Spiced Chia Pudding

So simple, yet so delicious! Made with our Delicious Date Almond Milk

Serves 1
Ingredients
2tbs chia seeds
1 cup Date Luz Almond Milk
1 tsp cinnamon
1 tbsp flaked almonds, toasted
3 baby Iranian figs in spiced syrup (we used Tar 10 Sticky Fig) (optional)
Method
  1. Combine chia seeds with Date Luz Almond milk and cinnamon mix and leave to sit until chia seeds have swollen (10-20mins).
  2. Refrigerate preferably overnight.
  3. Serve topped with figs (if using) and flaked almonds.

Rose Water Infused Black Rice

Ingredients

2/3 cup black rice

1 red apple grated

¼ cup pistachios, ground of whole

½ punnet chopped strawberries

rose water

arils of ½ pomegranate

honey, rice malt syrup or sweetener of choice

rose petals (optional)

½ cup Luz Almond milk

 

Rose Water Infused Black Rice with Almond Milk Recipe

 

Method

  1. Cook black rice according to packet instructions (can be prepared in advance).
  2. Add the apple and stir over low heat for 2 minutes or until the apple is tender.
  3. Add almond milk and simmer for 2-3 minutes.
  4. Divide rice between 2 bowls and sprinkle with rose water to taste.
  5. Top with strawberries, pomegranate, pistachios and rose water.
  6. Serve immediately. Serves 2.

Warm Chia & Oat Porridge with Mandarin & Raspberry

Warm Chia & Oat Porridge with Mandarin & Raspberry

Serves 1

Ingredients
1 mandarin peeled and separated into segments
¼ – ½ cup raspberries (fresh or frozen, although if frozen allow to defrost)
1 tbsp chia
1/3 cup rolled oats
2/3 cup Luz Almond Original Almond milk
½ cup water
1 tsp vanilla extract
1 tsp rice malt syrup or other sweetener
2 tbsp shredded coconut
pinch of salt

 

Almond Milk Recipe Warm Chia & Oat Porridge with Mandarin

 

  1. Place all ingredients EXCEPT mandarin and raspberry in a small saucepan over medium heat. Bring to the boil and reduce heat slightly. Stir continuously for approximately 5 minutes or until thickened and desired consistency achieved.
  2. Serve immediately topped with mandarin and raspberries.

Cacao Truffles

A delicious and healthy cacao truffle which makes the perfect not – so – naughty treat at this time of year!

Ingredients

1/3 cup purple skinned sweet potato puree (see step 1)

15 pitted Medjool dates

1 1/2 cups walnuts

1/2 cup raw cacao

1 tsp cinnamon

1 tbsp chia seeds

1 tbsp coconut oil (optional)

1/2 cup slivered almonds, toasted

 

Method

1. Heat oven to 250 degrees celcius (or very hot) and bake the sweet potato for 1 hour or until soft when pierced with a fork. Allow to cool and then scoop out flesh from the skin (discard skin). Puree flesh in food processor (Mash can be made in advance and kept in the refrigerator).

2. Chop 1/4 cup of walnuts roughly and set aside. In food processor grind remaining walnuts until fine, then add dates and mashed sweet potato. Blend until mixture sticks together.

3. Add raw cacao, chia seeds and cinnamon and blend until incorporated. Add coconut oil (optional).

4. Remove from food processor and fold in chopped walnuts evenly.

5. Roll teaspoon sized amounts into balls and roll in almonds.

6. Place on tray and refrigerate until set (1 hour +). Enjoy as you please!

Tips

–        try other coatings to mix it up – chopped goji berries, cacao powder

–        to make the truffles that extra bit special dab them with gold leaf (see below)

Lemon Chia Vanilla Oats

Lemon Chia Vanilla Oats

Serves 1

Ingredients

1/3 cup oats

1 tbsp chia seeds plus extra for topping

1 C Luz Almond Original milk (or 1/2C water and 1/2C Luz)

pinch of salt

1 tbsp stevia (or sweetener of choice)

1tsp vanilla powder OR vanilla extract

Rind of 1 lemon plus extra for top

1 egg white

shredded coconut for topping

 

Method

1. Combine oats, chia seeds, Luz Almond Milk, salt, vanilla and stevia/sweetener in a saucepan over medium heat. Bring to the boil then reduce heat and simmer for 2-3 minutes constantly stirring.

2. Add egg white and continue mixing, until completely incorporated and oats have reached desired consistency.

3. Pour into bowl and top with coconut, lemon rind and extra chia seeds.

4. Serve immediately.

In September we met up with one of our favourite food bloggers and the clever, creative soul behind the awesome instagram account BreakfastCriminals… Ksenia! In true New York style, we met up in iconic Central Park and shared one of Ksenia’s delicious creations…a Dragon Fruit Berry Bliss Chia Pudding (for the recipe click here). In case the picture doesn’t say it all…it was BEYOND delicious and packed with superfood goodness!

Ksenia founded Breakfast criminals after a visit to Hawaii where she was exposed to the exotic tropical goodness of colourful, superfood packed acai bowls. After a quest to find something similar back home in NYC, Ksenia was disappointed to find the limited options available lacked the love and soul which enriched those with which she had fallen in love with in the Aloha culture. So with some experimentation, inspiration and tonnes of enthusiasm from her friends and the instagram community, breakfast criminals was born!!

Recently she completed her 200 hour yoga training and is also undergoing her advanced spiritual leadership training. Cacao Mint Smoothie

Start your day with this nutrient packed smoothie!
Ingredients

1 cup Luz Almond Cold Pressed Almond milk with Medjool Date

½ bunch mint, roughly chopped

1 tbsp chia seeds

1 tbsp cacao powder

Maple syrup to taste

1 frozen banana

 

Method
1. Blend all ingredients until smoothie consistency, adding maple syrup last to taste.
2. Top with a mint leaf and there you have a delicious and nutritious breakfast which will keep you full for hours!

Cooling Green Smoothie Bowl

Ingredients

  • 1/2 cup Luz Almond Original
  • 1/2 banana
  • 1/4 avocado
  • 1/2 cucumber
  • two large handfuls of spinach
  • Vanilla protein powder
  • 1 tbs nut butter
  • 1/2 cup of ice (the more you add the thicker it gets)
  • 1 tsp stevia
  • Toppings: berries/granola/coconut chips/chia/activated nuts etc

Method

1. Blend until desired consistency.

2. Top with cut up berries, granola, coconut chips, chia seeds, activated nuts etc.

Optional: add any fresh herbs like parsley, mint etc. for an extra zing! The more greens, the better 🙂
